teaspoon Baking soda |

teaspoons Grated orange rind |

teaspoon Salt |

Vegetable cooking spray |

cup Sifted powdered sugar |

tablespoon Orange juice |

Step 1 |
Cream the sugar and margarine at medium speed of a mixer until light and fluffy (about 3 minutes). Add orange juice concentrate and egg; beat well. |
Step 2 |
Combine flour, baking soda, orange rind, and salt; stir well. Gradually add to creamed mixture, beating well. |
Step 3 |
Drop dough by level tablespoons onto baking sheets coated with cooking spray. Bake at 350 degrees for 12 minutes or until lightly browned; let cool completely on pans 1 minute. Remove from pans; let cool completely on wire racks. |
Step 4 |
Combine the powdered sugar and 1 tablespoon orange juice; stir well, and drizzle over cooled cookies. |
Step 5 |
Yield: 2 dozen (serving size: 1 cookie). |
