Summer Lavender Lemonade

Ingredients

1/2 cup raw honey
5 1/2 cups water

Preparation

Use a vegetable peeler to remove the zest from two lemons, being sure to leave the white pith behind

Squeeze all 4 of the lemons to produce 2/3 cup juice and set aside

In a large pot bring 5 1/2 cups water and zest to a boil over high heat

Stir in the lavender. Partially cover the pot, lower the heat and simmer for 10 minutes

While the lemon zest and lavender are simmering, place a large strainer lined with cheesecloth or a damp paper towel over another pot or heat-proof bowl

Strain lemonade, pressing on herbs to extract all liquid

Stir in honey until dissolved

Stir in lemon juice

Let lemonade cool completely, approximately 45 minutes

Fill 4 glasses with ice, poor lemonade over ice, and serve immediately
