Coffee Almond Crisps

Ingredients

1/2 cup brewed coffee at room
temperature
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 1/2 teaspoons ground cinnamon,
divided
1 cup chopped almonds, toasted
3 tablespoons sugar

Preparation

In a large bowl, cream the shortening and the brown sugar until light and fluffy. Add the eggs, one at a time. Beat well after each addition. Beat in the coffee.

Combine the flour, baking soda, salt, and 1 teaspoon of cinnamon. Gradually add to the creamed mixture. Mix well. Stir in the almonds.

Drop by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. Combine the sugar and the remaining cinnamon. Sprinkle over the cookies. Flatten slightly. Bake at 375 F for 10-12 minutes or until firm. Remove to wire racks.
