Lemon Roasted Halibut With Peppers and Onions

Ingredients

400 grams Halibut (100 g per person)
1/2 red pepper sliced thinly
1/2 yellow pepper sliced thinly
1/2 small sweet Visalia onion sliced thinly
2 cloves garlic minced finely
1 tablespoon olive oil

Preparation

Pre-heat oven to 350F.

Heat olive oil in a cast iron pan. Add onions and sweat for a minute. Add peppers and cook for a minute or so. Remove from pan and set aside.

Add Halibut skin-side down and cook for 2 minutes.

Mix chicken stock, lemon juice and garlic together.

Place lemon slices all over the Halibut. Scatter the onions and peppers over the fish.

Pour lemon juice stock mix over Halibut and place in the pre-heated oven for 15-20 minutes, until fish is cooked through.

Serve on a bed of greens.
