Stuffed Sour Dough French Toast

Ingredients

2 tablespoons butter
powder sugar for topping
(I usually eyeball the last ingredients)

Preparation

In a small bowl crack eggs

Whisk in the honey,cinnamon,sugar and salt then set aside

Cut the slices of bread in half and spread a generous amount of ricotta cheese on all slices

Over the Ricotta cheese spread enough preserves to make the bread stick when closed

Press the halves together making 2 half sandwiches.

In a skillet melt the 2 tbs of butter on a little less than medium heat

Coat both sides of the sandwhiches in the egg mixture and place in the skillet, repeat with other half.

Cook for 3 minutes on each side , cutting away the excess egg formed around the bread before

When they're done let cool on a wire rack patting away extra oil with napkin

Sprinkle with powder sugar and drizzle with honey
