cups Boiled and cooled rice

2

Green chillies

1

stalk curry leaves

1

Onions finely chopped

1

tablespoon Grated fresh coconut

½

tablespoon Coriander finely chopped

¼

teaspoon Cumin seed, mustard seeds, urad dal

¼

teaspoon Turmeric powder

2

pch asafoetida, (2 to 3)

Salt to taste

Half lemon, juice of

tablespoon Oil

Step 1

Use a heavy or nonstick pan.

Step 2

Heat oil, add seeds, and dal. Allow to splutter.

Step 3

Add green chillies, curry leaves, onions, asafoetida

Step 4

Cook till onions are light pink.

Step 5

Add rice, turmeric, salt, lemon, coriander, coconut.

Step 6

Stir gently till well mixed.

Step 7

Cover and simmer till steaming hot.

Step 8

Serve hot.

Step 9

Making time: 20 minutes

Makes: 3 servings
