White Chili With Chicken (Healthy and Hearty!)

Ingredients

3 Large Chicken Breasts (poached or roasted and pulled)
1 Medium Yellow Onion, Diced
4 cloves Garlic, Minced
4 cans Cannellini Beans, Drained and Rinsed
2 wholes Jalapeno, Sliced (1 if you want less heat)
1 teaspoon Ground Cumin
Salt and Pepper, To Taste
Plain Yogurt (a healthy and tasty alternative to sour cream)
Grated Monterey Jack, To Taste

Preparation

Poach chicken breasts in water or broth until cooked through. After cooked, pull chicken apart with 2 forks to shred meat.

In a dutch oven over medium-high heat, saute onions and garlic for 2 minutes.

Add chopped green chilies, then rinsed beans.

Pour chicken broth into the pan and bring to a boil. Add sliced jalapenos. Season with salt, pepper, cayenne and cumin.

Turn heat down to med (or med-low) and simmer for about 30 minutes.

Add shredded chicken.

Cook for an additional ten minutes until thick.

Serve chili in a bowl. Garnish with cilantro, yogurt , and extra cheese.

Add some Monterey Jack cheese to the pot and stir to melt, optional.
