Christmas Prawns and Spinach Filo Rolls in Philadelphia Cheese

Ingredients

2 dozens Medium Prawns
8 Filo Pastry Sheets
250g Spinach
250 Philadelphia Cream Cheese
50g Bacon Bits
1 Beaten Egg
¼ slab Butter ( melted )
Salt and Pepper to Taste
Wild Rocket Salad
60g Wild Rocket or Arugula
1 dozen Cherry Tomatoes
1 tbsp Corn Kernels
3 tbsp Citrus Salad Dressing

Preparation

Wash spinach thoroughly, dispose the roots and cut the rest into bite-size length.

Remove prawn head and shells, and devein. Rinse and dice. Add seasonings and mix well.

Add Philadelphia cheese to prawns.

Add eggs and mix well.

Throw in vegetables and mix well.

Lastly, add in bacon and mix thoroughly.

Remove filo sheets from packaging. To keep them from drying up, place a clean wet cloth on top to cover.

Divide the 18 filo sheets into 4 parts, then cover them.

Take out 1 sheet and brush melted butter on it.

Do the same for the other 3 and stack them up. Scoop the fillings onto the layered sheets.

Roll it and then tie the both ends with a string. Grease the baking tray, place the filo roll in one by one and cover with a cling wrap to prevent drying. Do the same for the rest. Preheat oven at 180°C. I’m using a convection oven. Bake for about 10 – 15 minutes or till golden brown.

Mix the salad ingredients and seasonings together. Place them onto serving plate. Transfer the Filo rolls onto plate. Remove the strings ( optional ) and serve your Christmas Prawns and Spinach Filo Rolls in Philadelphia Cheese hot!
