medium yellow onion, diced |

zucchini, diced |

Anaheim pepper, chopped |

tablespoons mild chili powder |

teaspoons cumin |

Put all ingredients in a slow cooker and cook on high for at least 2 hours |
This is a quick, easy and healthy vegetable chili - perfect on a cold day. Delicious toppings: sour cream, chives, fresh parsley or basil, lemon zest, cheddar cheese.
