large can chopped tomatoes

1

can kidney beans

1

medium yellow onion, diced

2

zucchini, diced

1

Anaheim pepper, chopped

2

tablespoons mild chili powder

2

teaspoons cumin

Kosher salt

Step 1

In a skillet saute onion and zucchini until slightly brown

Step 2

Put all ingredients in a slow cooker and cook on high for at least 2 hours

This is a quick, easy and healthy vegetable chili - perfect on a cold day. Delicious toppings: sour cream, chives, fresh parsley or basil, lemon zest, cheddar cheese.
