Crisp Summer Green Bean Salad with Walnuts and Cranberries

Ingredients

8 cups green beans, slim beans that are trimmed and cut into 2 ″ pieces
1 cup walnuts
1/4 cup walnut oil
1 tablespoon Dijon mustard
2 tablespoons honey
4 tablespoons rice vinegar
1 tablespoon thyme, finely chopped
2 tablespoons lemon zest

Preparation

Combine walnut oil, Dijon mustard, honey, vinegar, thyme and lemon zest in a bowl.

Toss with remaining ingredients and serve warm or cold.
