Step 1 |
Wash chicken in cold water and pat dry. Rub chicken in and out with clove of garlic (split in half). Leave garlic in chicken. Squeeze juice of lemon on chicken (in and out). Sprinkle chicken (in and out) with coarse salt and pepper. Add parsley, basil and rosemary to chicken cavity. Add a little water to bottom of pan and roast at 400 degrees. (Optional - add 1/4 cup chicken broth. After cooked, add 2 teaspoons chopped shallots to broth at bottom of pan and this will make a sauce that can be served over the chicken.) |
