Bran Muffins

Ingredients

1 cup flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
2 cups 100%% all-bran cereal
1 1/4 cups buttermilk
cup packed brown sugar
4 teaspoons eggswhites
1/4 cup water
4 tablespoons nonfat plain yogurt
1/2 teaspoon vanilla extract

Preparation

Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or spray with nonstick oil.

Sift together first 4 dry ingredients in a bowl. Set aside.

In a separate bowl, mix together bran and buttermilk. Let stand for 10 minutes.

Add in the brown sugar, vanilla, eggwhites, water and yogurt to the bran and buttermilk

Add dry ingredients to wet ingredient mix.

Do not over stir.

Spoon into muffin tins sprayed with nonstick oil.

Bake for 15 to 20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Cool and enjoy!
