Koenigsberger Klopse

Ingredients

1 pound Ground beef (best ½ beef and ½ 1 Egg
2 Anchovies fillet.minced
3 cups Beef stock
1/2 teaspoon Sugar
1/2 Onion, minced
1 salt and pepper
1 Laurel leaf
4 tablespoons Bread crumbs
1 small jar Capers

Preparation

Mix meat,bread, egg, onion anchovies fillets with pepper and salt and form 8 to 10 small balls.

In a large pan bring the stock to boil.

Add the laurel leaf and pepper corns.

Add the meat balls and let simmer for about 25 minutes.

Remove meat from broth. Cover, keep warm. Pour broth through a sieve and return to heat, Add bread crumbs and let simmer for about 5 minutes.

Season to taste with the sugar, lemon juice and salt and pepper.

Remove from heat, and stir in the egg yolk and capers.
