Portabello mushrooms, stems removed

tablespoons Olive oil

Salt and pepper to taste

cup Baby spinach

¼

cup Basil

1

teaspoon Tarragon leaves

1

teaspoon Balsamic vinegar

1

teaspoon Capers

2

Garlic cloves, roasted

2

tablespoons Extra virgin olive oil

8

ounces Coach farms goat cheese, sliced thin

Step 1

Prepare smoker. Rub mushrooms with olive oil and season with salt and pepper. Hot smoke for 10 minutes. Puree all sauce ingredients. Spoon over mushrooms. Add slices of cheese, a little more sauce and smoke for 5 more minutes.

Step 2

Yield: 4 servings
