Southern chicken stew is a traditional dish from North Carolina. It is a type of stew consisting of parboiled whole chicken in a cream or milk based broth, butter and seasoned with salt, pepper and other ingredients. Traditionally, the stew is served in the late fall and winter months. Often the term "chicken stew" refers to an event or gathering where the dish is served.

piece chicken breasts, stewed

1

(6 oz) can mushrooms

½

medium head cabbage, chopped

2

medium onions, chopped

salt, pepper and garlic to taste

1

can (12 oz) tomato juice

Step 1

To stew chicken, cover with water and pressure 15 minutes. Remove chicken from water, add mushrooms, cabbage and onions.

Step 2

Add salt, pepper, and garlic to taste.

Step 3

Add tomato juice and return chicken already chopped; simmer for about 1 hour.
