Yield: 2 servings

edit Ingredients

extra-large uncooked shrimp - (to 10) peeled, deveined

2

tablespoons olive oil

1

garlic clove minced

1

medium shallot minced

½

teaspoon basil

½

lrg red bell pepper seeded, and

cut into 1" squares

½

lrg yellow bell pepper seeded, and

cut into 1" squares

½

lrg yellow squash cut 1/4"-thk rounds,

then halved

Step 1

Place the shrimp in a bowl with the olive oil, garlic, shallot and basil. Toss to coat throughly. Set aside and let stand for about 1 hour.

Step 2

Preheat the grill you will cook on. Set the pepper pieces onto the grill, then place the shrimp onto the grill. Turn both after about 1 minute. Re-turn as needed to grill thoroughly.

Step 3

Place the shrimp in a fan in the center of a large serving dish, and surround with the peppers. Serve immediately.

Step 4

This recipe yields 2 servings.
