Chocolate Herbal Tea Truffles

Ingredients

2/3 cup heavy cream or thick cream
2 tablespoons unsalted butter,leave to soften
2 teaspoons loose herbal tea (used a combination of rose,lavender,lemon grass,rosemary,jasmine e
1 teaspoon icing sugar

Preparation

Bring cream and butter to a boil in a small heavy saucepan and stir in tea leaves.

Remove from heat and let steep 5mins.

Meanwhile.finely grind or chop the chocolate and transfer to a bowl.

Pour cream through a fine mesh sieve onto chocolate ,pressing on and discarding tea leaves,add in icing sugar ,then whisk until smooth.

Chill ganache,until firm for about 3 to 4 hours.

Traditionally truffles are made with chocolate ganache center coated in chocolate or cocoa powder, usually in a spherical, conical or curved shape. Other fillings may replace the ganache: cream, melted chocolate, caramel, nuts, almonds, berries or other assorted sweet fruits, nougat, fudge or toffee, mint, chocolate chips, marshmallow and popularly liquor.
