Daddy's Special Pineapple Cake

Ingredients

1/2 pound sweet butter, room temp
1 cup sugar
1 egg, well beaten
2 cups flour
2 teaspoons vanilla
2 squares semi-sweet chocolate, melted
2 cans crushed pineapple, drained
4 tablespoons flour
1 cup sugar

Preparation

For Dough:

Combine first 6 ingredients in a bowl and crumbe with clean hands until mixed thouroughly. No beaters or processor needed.

Flatten dough as bottom layer on a Pyrex dish leaving 2 oz of the dough over for a garnish.

Filling:

Combine the next 4 ingredients and layer on top of the dough covering end to end. Take the left over dough and piece it out, roll into long strings and decorate the top of the filling in x's or lines.

Bake at 350 degrees F for 55-60 minutes

From early marriage into my husband's family this cake, or squares were served as a traditional dessert for any special occasion involving my husband. This has cake is the symbol for all his fond memories of every holiday or birthday and it is THE cake that my mother-in-law seems to be the only one who ever had the recipe. Until now. As she ages, and upon my husband's insistance, I finally got the recipe. Actually, my daughter is the one who finally got the recipe.

The earliest memory of where the recipe came from, so my mother-in-law can recall, is from a friend back in the '30's where it has been he go-to dessert since.

The Pyrex dish must be a large one is all I was told. Inches unknown, but I suspect a 9 inch rectangle.

For those of you who make it - it will be fantastic; unfortunately since my cake is being compared to the original and for who nothing can beat the original; it didn't fare as well.
