Pumpkin Bread is a type of moist quick bread made with pumpkins. The pumpkin can be cooked and softened before being used or simply baked with the bread (using canned pumpkin renders it a simpler dish to prepare). Frequent add-ins include nuts or raisins. Pumpkin bread is usually baked in a rectangular loaf pan, and is often cooked in late fall when fresh pumpkins are available. It can also be made from canned pumpkin, resulting in a stronger pumpkin taste.

teaspoon baking powder

teaspoons baking soda

teaspoons salt

teaspoons cinnamon

teaspoons nutmeg

cup shortening

4

cups sugar

1 ½

teaspoons vanilla extract

large eggs

cups canned pumpkin

1

cup water

1 ½

cups walnuts, coarsely chopped

Step 1

Preheat oven to 350 degrees. Butter and flour three 9x5x3-inch loaf pans.

Step 2

Sift together dry ingredients; set aside.

Step 3

In a large bowl, cream shortening, sugar, and vanilla. Add eggs one at a time, beating well after each addition. Add pumpkin; mix well.

Step 4

Add in dry ingredients alternating with water. Mix until smooth. Fold in nuts.

Step 5

Turn batter into prepared pans. Bake for 45 to 55 minutes, or until tester inserted in the center of the loaf comes out clean.

Step 6

Transfer to rack and cool for 10 minutes before removing loaf from pan.

Variations use 2 cups white sugar and 2 cups brown sugar; substitute the walnuts for raisins, or add both.
