Pork Scaloppine

Ingredients

2 tablespoons flour
Salt and freshly ground pepper
2 teaspoons olive oil
3 mediums garlic cloves, crushed
2 mediums tomatoes, cut into 2 inch pieces (2 cups)

Preparation

Remove fat from pork. Cut pork into 1 inch slices, and place between 2 pieces of plastic wrap. Flatten with meat mallet or bottom of a heavy pan. Place flour on a plate and season with salt and pepper to taste. Dip pork slices into flour, coating both sides.

Heat oil in a large non-stick skillet on medium high. Brown pork 1 minute; turn and brown second side for 1 minute. Salt and pepper both sides of the pork.

Remove to a plate. Add garlic and tomatoes to skillet and cook 3 minutes. Spoon tomatoes over pork and serve.
