Matsutake Pine Mushroom Rice

Ingredients

2 1/2 cups short grain rice
2 2/3 cups water
Pinch of instant dashi for flavor
2 mediums sized matsutake
2 teaspoons sake
2 teaspoons soy sauce

Preparation

Rinse matsutake thoroughly, cut and discard the bottom portion

Slice the stems lengthwise into 2 pieces, the slice both the cap and stem the opposite way into small pieces

While the rice is cooking, there will be a lot of steam before the steaming stops. Place the matsutake on top of rice and quickly cover

Allow rice to continue steaming and do not mix ingredients until the rice has finished cooking

Once finished, transfer to a bowl and mix in sake and soy sauce until thoroughly blended.

About

Optional ingredients: very thinly sliced carrots, gobo, aburage (a type of fried tofu), chicken, etc. which can be cooked with the rice mixture.
