Roasted Cauliflower Soup

Ingredients

1 tablespoon olive oil
1 cup water
1 teaspoon thyme
1 teaspoon sea/kosher salt

Preparation

Preheat oven to 400 degrees

Chop cauliflower into thick pieces

Crush garlic

Quarter shallots/ red onions

Chop thyme

Combine cauliflower, garlic, onions, olive oil, and thyme into a pyrex.

Bake for 30 minutes or until brown, tossing every 10 minutes.

Combine everything BUT heavy cream into a pot and cook on low for 15 minutes.

Remove bay leaf and using a hand blender or food processor blend everything in the pot.

Slowly add the heavy cream and simmer for 5 minutes.
