Dad's Caramelized Apples With Apricot and Rose Glaze

Ingredients

3 apples (I like gala)
sugar
3/4 cup Rose wine

Preparation

Core and slice apples (I prefer to leave the skin on)

Preheat medium sized cast iron pan over medium high head and melt butter

Lightly sprinkle sugar over top of apple slices and lay them sugar side down in hot pan

Sprinkle another layer of sugar over the top of the apple slices and continue to cook until apples are well softened and lightly browned.

Turn and cook on other side until cooked through and caramelized on both sides

Remove cooked apples to serving dish.

Pour wine into pan and deglaze. Add apricots and reduce wine to a syrup. Mount sauce with the remaining butter and stir until melted. Pour over apples and enjoy

About

This recipe came together on a whim in my Aunt's kitchen on Mother's Day. It was the last thing I cooked for my father, and I'm sure the last dessert he ever ate. I'm glad it was a good one!
