Yield: 6 servings

[edit] Ingredients

slc Bacon

1

cup Onions, chopped

½

cup Green pepper, chopped

2

Cloves garlic, minced

1 ½

pounds Ground beef

1

can (28 oz.) tomatoes, chopped with juice

Salt and pepper to taste

1

tablespoon Chili powder

1

cup Kernel corn

1

cup Kidney beans, rinsed and drained

2

cups Potatoes, peeled and diced

Step 1

Fry bacon until crisp. Drain and set aside. Saute onion, green pepper, and garlic in bacon drippings. Add ground beef and cook until browned.

Step 2

Lower heat and add tomatoes and juice, salt, pepper, chili powder, corn, beans, and potatoes. Cook 45 minutes or until potatoes are tender. When ready to serve, crumble bacon over top.

Step 3

Yield: 6 servings
