cup coarsely chopped fresh garlic |

teaspoon coarse sea salt or kosher salt |

edit Preparation
Step 1 |
In a blender, combine garlic, salt, and 2 tablespoons oil and blend at high speed until smooth. |
Step 2 |
Transfer to a mortar. |
Step 3 |
Very slowly add remaining 3/4 cup plus 2 tablespoons oil, one tablespoon at a time, stirring and mashing with pestle (aioli will separate if oil is added too quickly). |
Step 4 |
Transfer to a bowl. |
