Recipe: Eggless Aioli edit

¼

cup coarsely chopped fresh garlic

1

teaspoon coarse sea salt or kosher salt

1

cup extra-virgin olive oil

edit Preparation

Step 1

In a blender, combine garlic, salt, and 2 tablespoons oil and blend at high speed until smooth.

Step 2

Transfer to a mortar.

Step 3

Very slowly add remaining 3/4 cup plus 2 tablespoons oil, one tablespoon at a time, stirring and mashing with pestle (aioli will separate if oil is added too quickly).

Step 4

Transfer to a bowl.
