Sparkling Pomegranate Ginger Cocktail

Where has 2009 gone! What a year it has been! I completed my first year as an attorney and now have 3 trials under my belt (all wins!!). I entered the wonderful world of blogging, and have discovered that not only do I have a passion for food and fitness, but also in photography! (Maybe 2010 will bring me the new Canon 7D I’ve been wishing for! *fingers crossed!*) I have met so many wonderful and gracious people in the food blogging community! I still can’t believe how warm, wonderful and welcoming food bloggers are! I have to say, 2009, you were very good to me.

On that note, I am already so excited about all the things that 2010 has in store! I am training for my first marathon – the San Diego Rock and Roll Marathon. I know it isn’t going to be easy, and I am still not quite sure how it is going to fit into my work schedule, but lord knows I will try my darndest! I am also very excited about learning much more about photography and getting a lot more practice!

To properly bring in the New Year, I wanted to celebrate with a delicious cocktail – New Years calls for festive cocktails. I love throwing together my own cocktails, and this one is just something that came to mind as I was thinking what I would like to be drinking on New Years. I LOVE Pama liquor, but I also wanted to incorporate some ginger into my recipe. I decided that it would be fun and festive to incorporate some candied ginger into a champagne cocktail. The result was a sparkling pomegranate and ginger cocktail with candied ginger. Let me just tell you, this drink is something special, absolutely delicious! I can attest to that as I had to *clean up* the glasses after taking the photos! ;) So if you are looking for a fun, festive and tasty cocktail to serve this New Years Eve, give this one a try!
