teaspoon vegetable oil

4

scallions, trimmed

and sliced diagonally

1

clove garlic, minced

1

teaspoon grated gingerroot

½

cup diagonally sliced green beans

2

cups sliced red cabbage

2

tablespoons water

1

tablespoon chopped fresh parsley

1

cup chopped fresh spinach

1

cup cooked couscous or pasta

Tamari or soy sauce, to taste

Step 1

Makes 4 servings. VEGAN

Step 2

In large nonstick skillet over medium-high heat, heat oil.

Step 3

Stir-fry scallions, garlic, gingerroot and green beans 5 minutes. Add cabbage and water; cover pan and steam vegetables 2 minutes. Add parsley and spinach; sir-fry until spinach wilts, about 1 minute. Add couscous or pasta; stir-fry 1 minute. Add tamari or soy sauce to taste.

Step 4

Makes 4 servings.
