Coffee Ice Cream With Bittersweet Chocolate

Ingredients

2/3 cup SUGAR
1 teaspoon VANILLA EXTRACT
(OR ¾ TSP INSTANT ESPRESSO POWDER)
2 ounces BITTERSWEET CHOCOLATE- SHAVED

Preparation

Prep your ice cream maker according to the manufacturer’s directions.

Heat the half & half until warm- not hot.

In a bowl, whisk the egg yolks until blended. Add the sugar

And about 1/2 of the warm half and half.

Stir to combine well and add the mixture back to the saucepan. Whisk briskly while combining.

Cook over medium heat until the mixture coats the back of a silicone spatula (about 10-12 minutes).

Place the pan with the custard in an ice bath to cool, stirring occasionally, until it reaches room temperature.

Add the cream, coffee and vanilla, stir well. Pour into another container and chill until cold -several hours-or you are ready pour into the ice cream maker.

Freeze in the ice cream maker according to the manufacturer’s directions. When the ice cream is done freezing, stir in the shaved chocolate.

About

Ice cream is easy to make, all you need is a basic custard and your favorite flavors. In this recipe, I made a coffee ice cream and stirred in some shaved bittersweet chocolate. It’s delicious without being overwhelming or sickly sweet. For the record- I have a Cusinart 2qt Ice cream maker with a freezable bowl. It’s easy to use and does a wonderful job.
