Scampi is a culinary name for some species of lobster, notably the 'true' scampi ''Nephrops norvegicus'', and is also used as a name for a style of preparation of these lobsters and other seafood.

cup olive oil |

tablespoon minced garlic |

cup white wine |

tablespoons lemon juice |

pound shrimp, shelled |

tablespoons fresh parsley |

teaspoon salt |

teaspoon pepper |
Step 1 |
In a large skillet, melt butter and oil. Add garlic and saute 30 seconds. |

Stir in shrimp, parsley, salt and pepper. Cook 2-3 minutes over high heat, stir constantly. |
Step 4 |
Serve with rice. |
