Salt Baked Prime Rib Roast
4 pound bone-in prime rib roast
2 cups coarse kosher salt (important that it is coarse, not fine!)
Freshly ground black pepper, to taste
Preheat oven to 210 degrees F
Cover the bottom of a roasting pan with a thin layer of coarse kosher salt. Place the roast, bone side down, on the salt and season well with freshly ground black pepper.
Cover roast with remaining salt. Don't worry if the entire roast is not completely covered.
Roast in preheated oven for 4 hours, or until the internal temperature of the meat reaches 145 degrees F.
Remove from oven and let rest for 30 minutes to allow juices to set. Remove roast from salt; carve and serve.
