Spicy White Bean & Kale Soup

2 cloves of Garlic
1 bunch of Chopped Italian Parsley
1 teaspoon of Sea Salt
3 Bay Leaves

Preparation

Directions

Soak beans for 3 hours in 9 cups of water.

Discard water

Sauté onions and garlic in coconut oil

Add beans and add 9 cups of water

Add spices

Cook for 1 hour

When beans are soft add carrots and cook until tender

Add Parsley and cook for 10 more minutes

Cool slightly and puree (remove bay leaves)

Add chopped kale and allow to steam in the soup - do not reheat, to avoid cooking kale

Ladle soup into bowls and serve with bread of choice
