Pumpkin Raisin Pancakes

Ingredients

1/2 cup unsweetened almond milk (you could use ¼ cup if you want your pancakes bigger)
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 tablespoons heaping of organic raisins
1/2 teaspoon pumpkin pie spice

Preparation

Stir the flour, baking soda, salt, stevia, cinnamon, nutmeg, and pumpkin pie spice together in a small bowl.

In a separate bowl, whisk together the egg white, pumpkin, and unsweetened almond milk.

Stir into the dry ingredients and stir just enough to moisten everything

Heat a skillet over medium high heat and spray with nonstick spray.

Pour the batter into the preheated pan and drop raisins on top immediately. Cook until bubbles appear on the top, about 3 minutes. Flip and cook an additional minute or two. Repeat with remaining batter.
