Nanny Fran's Stuffed Breast Of Veal
Ingredients
3 pounds
veal breast
2
yellow
onions
1 pound
starchy
potatoes
1/4 cup
matzoh
meal
1
egg
2 teaspoons
veg
oil
2 ea
bay
leaves
2 teaspoons
red wine
vinegar
1 teaspoon
soy sauce
4 cups
chicken
or
veal stock
kosher salt
lot's of freshly ground
black pepper
Preparation
1
Make pocket in veal breast.
season
well with
salt
and pepper.

Slice
yellow onions thinly and saute to
brown.

Peel
potatoes and grate with large holes of box grater.
Season
(use lot's of pepper) and
mix
with matzoh meal and half of onions.

When
cool
enough add egg to
mix
and
stuff
into pocket of breast.

Use toothpicks or sew the opening closed.

Scatter rest of onions and bay leaves on bottom of
roasting
pan and place veal breast on
top.

Pour stock and vinegar and soy over
top
and cover with foil.

Bake
60 mins at 400 degrees then uncover and let
brown
for 30 more minutes.
