Shrimp Tacos With Avocado Peach Salsa

Ingredients

4 tablespoons oil for frying the tortillas
For the Salsa:
4 scallions chopped
1 avocado chopped
1 peach pealed and chopped
1 tomato chopped
1 stalk celery chopped
1 cup corn
1 cup peas
1 tablespoon butter
1 1/2 lemons juiced (reserve 2 T for shrimp)
1 tablespoon sesame oil
1 tablespoon soy sauce
Jalapenos to taste
1 1/2 pounds fresh shrimp peeled& deveined
2 tablespoons butter
Topping:
1 ball fresh mozzarella julienned

Preparation

Fry tortillas until lightly browned. Fold in half and drain on paper towels.

Saute corn in 1T butter for 2 minutes and set aside to cool

Saute peas in 1 T butter for minutes and add to corn

Mix together all the salsa ingredients

Saute the shrimp in butter and garlic until done then add 2 T lemon juice.

Fill the tortillas with salsa and top with shrimp and mozzarella.
