Penne ( , or ) is a type of pasta with cylinder-shaped pieces. ''Penne'' is the plural form of the Italian ''penna'', deriving from Latin ''penna'' (meaning "feather" or "quill"). In Italy, ''penne'' are produced in two variants: "''penne lisce''" (smooth) and "''penne rigate''" (furrowed), the latter having ridges on each noodle. The same or similar shape is also called mostaccioli (meaning "little mustache" in Italian, a form of ''penne lisce'' that is smooth, not ridged, in texture) and ziti (long hollow rods which are also smooth in texture and have square-cut edges; "cut ziti" are ziti cut into shorter tubes),Ziti/Zitti, and can refer to particular dishes made from penne-shaped pasta. ½

lb ziti (or other shape pasta)

16

ounces ricotta cheese

3

cups mozzarella cheese , grated

3

cups spaghetti sauce

½

cup parmesan cheese , grated

[edit] Preparation

Step 1

Preheat oven to 350.

Step 2

Boil ziti or other pasta, i.e. rigatoni, penne, farfalle, rotini, following package directions, drain and place in a large bowl.

Step 3

To ricotta, add salt and pepper (about 1tsp each), dried parsley and blend. Mix all the ricotta cheese and half of the mozzarella with the ziti.

Step 4

Spray a 13x9 pan with Pam.

Step 5

Cover the bottom half of the pan with about half the sauce.

Step 6

Put the ziti mixture on top of sauce.

Step 7

Pour remaining sauce on top of ziti.

Step 8

Sprinkle with the parmesan cheese.

Step 9

Top with the remaining mozzarella cheese.

Step 10

Bake for 20-30 minutes until cheese is melted and it is lightly golden.
