Goat's Cheese & Tomato Salsa Brushetta

Ingredients

400 grams Goat's Cheese
1 Ciabatta
200 grams Tomatoes
80 grams Diced Red Onion
20 grams Chopped Red Chillies
1 Lime Juice & Zest
Olive Oil
Sea Salt
Milled Black Pepper

Preparation

Cut and de-seed the tomatoes

Dice them into small pieces and place into a bowl

Add the red onion and chopped chilli Add the red onion and chopped chilli

Add the lime juice and zest
5
Pour over the olive oil to just cover, season well and set the salsa aside

Slice the ciabatta into eight and chargrill
7
Place the Goat's Cheese on the ciabatta
8
Spoon the salsa over the goats cheese and serve two pieces each
.
