Ingredients
1 tsp
vanilla extract
1/4 teaspoon
salt
1/4 cup
potato
, mashed
4 cups
powdered sugar
1 cup
smooth peanut butter
Preparation

Add the
salt
and vanilla to
mashed
potatoes.

Gradually add powdered sugar until mixture is stiff and
dry.
Divide into 3 parts.

Roll
out one part at a time on wax paper until about 1/4 inch thick (4x12 rectangle of dough).

Spread with a thin layer of peanut butter and
roll
up. Repeat with the remaining dough.

Chill
several hours and
slice
thinly.
Store
in the refrigerator
