Arugula Salad With Oranges

Ingredients

2 bn arugula
5 Oranges
2 tablespoons Olive oil
2 tablespoons Red wine vinegar
1/4 teaspoon Salt
1/4 teaspoon Pepper
1/4 cup Pine nuts or walnuts,toasted
cup Chopped red onion

Preparation

1. Break arugula into pieces and place in a salad bowl.

2. Peel oranges and cut into sections, reserving juices.

3. In a small bowl, whisk together oil, vinegar, reserved juices, salt and pepper.

4. Toss serve, add oranges, nuts, red onion and dressing to arugula.

Toss lightly before serving.
