Lemon Garlic Olives

Ingredients

1 (10-ounce) jar large green, pimiento-stuffed Spanish olives
4 lrg cloves garlic, crushed
1/2 lemon, cut into wedges
3 tablespoons fresh lemon juice

Preparation

Drain the jar of olives, reserving the brine. Place the olives in a colander and rinse thoroughly with cold water, then let drain thoroughly.

Layer olives, oregano, garlic, lemon wedges and peppercorns in the olive jar.

(Reserve the olives that do not fit back into the jar for something else.) Add the lemon juice and top off with the reserved brine.

Shake well and let olives marinate in the refrigerator for at least 1 week.
