Broccoli Raab With Garlic, White Beans, Tomatoes, and Parmesan

Ingredients

30 tablespoons olive oil, divided
2 cloves garlic, minced
2 (12-oz) bunches broccoli raab, trimmed and coarsely chopped
1 teaspoon red pepper flakes
1 (14-oz) can white beans, rinsed and drained
1/4 cup grated Parmesan cheese, for garnish

Preparation

Heat 2 tablespoons of the oil in a wok over medium heat. Saute the garlic until it sizzles, and add the broccoli raab and red pepper flakes. Saute 5-7 minutes or until broccoli raab is wilted. Transfer broccoli raab from wok to a serving plate.

Add remaining oil to the wok; add tomatoes and cook 5-7 minutes or until skins brown and tomatoes split, stirring occasionally. Stir in the beans, and cook 2-3 minutes more. Spoon tomato bean mixtures on top of broccoli raab, and garnish with Parmesan.
