Lady Bird's Lemon Cake

Ingredients

3/4 cup unsalted butter, room temperature
1 1/4 cups sugar
3 teaspoons baking powder
1/4 teaspoon salt
3/4 cup whole milk
1 teaspoon vanilla extract
1 teaspoon lemon juice

Preparation

Grease and flour a 10 inch bundt pan

In a medium bowl beat yolks on medium speed until fluffy and light

In a large bowl beat butter and sugar for 3 minutes

Beat in yolks

Sift together flour, baking powder and salt in a medium bowl

Add 1/3 of flour mix to butter mixture and beat at medium speed

Add 1/2 the milk and more flour, then remaining milk and flour,scraping sides

Add vanilla, lemon zest and juice and beat until well blended about 2 minutes

Pour batter into prepared pan

Bake in preheated 325F oven about 50-60 minutes

Cool on rack
