Greek Salad

Traditional "Greek salad", known as horiatiki (country or village salad) in Greece, is a simple salad of mainly tomatoes, cucumbers, onion, olives and feta that is often eaten in the summer months. Sometime green pepper, anchovies, oregano and/or lettuce is also added.

  • 5 large ripe tomatoes
  • 1 large red onion
  • 1 large cucumber
  • 1/4 pound greek feta
  • 1 dozen Kalamata olives
  • high-quality extra virgin olive oil

Instructions

Step 1

Slice the vegetables into bite-size wedges.

Toss the sliced vegetables in a bowl with olive oil.

Place feta on top of the salad or break it up into crumbles.
