Cilantro Pesto

Ingredients

1 tablespoon garlic, minced
1 cup cilantro leaves
3 tablespoons pepitas, (pumpkin seeds)
2 tablespoons olive oil
teaspoon salt
lime, Juice of

Preparation

Grind all the ingredients together in a blender or a food processor fitted with a steel blade until it becomes a paste.

Great with seafood; perhaps with shrimp and pasta, as a baste for a mixed grill, or mixed with escargot and Jack cheese to fill your own raviolis.
