Tomato and Bacon Pizza With Rice Crust

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

For the rice crust:
2 cups cooked rice
1 egg
1 cup mozzarella cheese
1 tablespoon italian seasoning
For the topping:
2 ripe tomatoes, sliced into rounds
At least 6 strips of turkey bacon, cut into 2 inch pieces
2 cups mozzarella cheese, shredded
2 bell pepper, sliced

Preparation

Preheat oven to 400F.

To make rice crust, mix ingredients in a bowl. Press onto greased pizza pan (10 inch) evenly.

Spread bacon, tomatoes, pepper and mozzarella cheese on top of rice crust.

Bake for 20 minutes or until cheese melts.

Slice and serve warm.

A rice crust? Weird, is it crunchy or slightly soft like a crust?

You would think that growing up in a country that eats rice at least 3 times a day, I wouldn’t have any problem coming up with a dish that includes this staple. For the June Royal Foodie Joust hosted by The Leftover Queen/Foodie Blogroll Forum , the ingredients include: rice, tomato and bacon. Those three alone conjures images of paella, rice bowl, fried rice….well, you get the picture. So while I was devouring a bowl of fried rice topped with sliced fresh tomatoes for my lunch, my husband declared he wants pizza for dinner. Right. I wanted to make something with rice so I can use the three ingredients. And he wants pizza. Hey, wait a minute. So why can’t I make rice pizza? He wants pizza? He’ll get pizza. Here is my TOMATO AND TURKEY BACON PIZZA WITH RICE CRUST. It is just your plain pizza made with rice crust and topped with fresh tomatoes, mozzarella cheese, bell pepper and shredded turkey bacon. I ran out of basil leaves but it would have been perfect if I had some to add to the topping.
