I had the BEST stuff last summer. A guy was cooking ribs on a closed grill. About 30 minutes before we ate, he put a small cast iron skillet onthe grill & closed it back up. The skillet turned out to contain a package ofthawed spinach, fresh garlic, balsamic vinegar, and a touch of bacon. I triedit with a little ham base (or pork bouillon) and bacon bits & it worked great.
It was smoky & absolutely delicious. And I'm NOT a spinach eater.
