Spicy Ro-Tel Mashed Potatoes

Ingredients

1/4 cup of Velveeta Cheese; diced into cubes
1/4 cup of a 12 can of Ro-Tel tomatoes with green chiles (Hot style)
1 teaspoon of garlic powder or 1 clove of finely chopped garlic
1/4 cup of milk
Salt and Pepper to taste

Preparation

Slice potatoes really thin (almost like potato chips), this helps them cook faster

Place potatoes in large pot and cover them with cold tap water

Boil potatoes until soft (stick a fork in them to make sure they're "mashable"

Drain potatoes.

Put potatoes back in hot pot and turn heat to low

Add cubed cheese and 1/4 cup of milk

Add drained Ro-Tel tomatoes with green chiles(only 1/5 of the can or 1/4 cup)

Mash potatoes with manual masher or whip with handheld mixer.

Let heat through and cheese melt.

Add the garlic.

Stir often to combine ingredients.

About

I tried this recipe by mistake trying to use up all my leftover Ro Tel dip that I knew we'd never eat, it turned out amazing. WARNING: These potatoes are extra spicy, it you don't prefer spicy foods, I'd recommend using the milder version of the Ro-Tel tomatoes with green chiles.
