Curried Tuna Salad in Lettuce Wraps
7oz Tuna, in the can, packed in water and drained
2 TBS. Carrot, peeled and shredded
1 Small Celery Heart Rib with Leaves, chopped
1 Scallion, chopped with green tops set aside
1/2 Jalapeno Pepper, seeded and chopped
1TBS. to 1 1/2 TBS. Madras Curry Powder
3-4 TBS. Vegenaise or Mayonnaise
Freshly Cracked Black Pepper and Salt, to taste
3-4 Large Red Leaf Lettuce Leaves, washed and dried of excess water
1/2 Lemon, cut into wedges
1 Tomato, chopped or 5 to 6 Cherry Tomatoes halved
Sriracha, to taste
For garnish and to finish:
Chopped Scallion Green Tops, Chopped Fresh Tomato, Squeeze of Fresh Lemon Juice and Sriracha!
In a mixing bowl, mix drained tuna with shredded carrot, chopped celery & leaves, chopped scallion (white part), chopped jalapeno pepper, Madras curry powder, Vegenaise or Mayonnaise, salt and black pepper.
On a large plate, arrange lettuce leaves fanning them out. Stem sides to the center of the plate.
Divide Curried Tuna Salad on top of lettuce leaves.
Add desired garnishes: chopped scallion greens, tomato, freshly squeezed lemon juice and / or Sriracha hot sauce
"Wrap" up the tuna salad in the lettuce like a small package.
Messy, but so yummy!
Delicious and satisfying. All quantities are approximate. Feel free to change them to your liking. I prefer using Vegenaise by Earth Island as a healthy alternative to mayo in this recipe.
