110 gr flour sifted
pinch of salt
200 ml milk and 75 ml water combined
50 gr butter
1 tbsp caster sugar
1 tsp almond extract
crushed pistacchio (optional, but they will add a nice crunchiness)
Sift the flour and the salt into a large bowl and make a well.
Break the eggs into it and start whisking. Now start pouring the milk and water gradually.The batter has to have the consistency of a thin cream.
To continue melt the butter and add 2 tbsp in the batter with the almond extract, the sugar and the pistacchio. Whisk well until all ingredients are incorporated.
Add a bit of the rest of the butter in a pan and use some kitchen paper to smear it around. Get the pan hot but not burning.
Use a ladle to pour the batter in the pan and control the portion. Don’t forget these are not pancakes, they have to be quite thin. You can use your imagination to fill them. I used chocolate, banana and biscuits and it was delish!
