Sweet Maple Pumpkin Bread

Ingredients

5 cups Pumpkin, canned
1 cup Turbinado Sugar
2 flax "eggs" ( 2 tablespoons flax meal + 6 tablespoons water, let sit for 5 minutes)
2/3 cup Maple Syrup
2/3 cup Almond Milk
1/3 cup Coconut Oil
1 teaspoon Vanilla Extract
4 cups Spelt Flour
3 teaspoons Baking Powder
3 teaspoons Baking Soda
1 tablespoon Cinnamon
1 teaspoon Nutmeg

Preparation

Preheat oven to 350 degress. Oil 2 loaf pans

Combine pumpkin, sugar, maple syrup, eggs, milk, oil, and vanilla extract in a bowl.

In a separate bowl combine flour, baking powder, baking soda, cinnamon, and nutmeg

Bake for 1 hour.

Let cool in pans for 15 minutes, then let cool on a wire rack.
