cup chicken broth, soup base or bouillon cubes |

cup rice |

small carrot, cut fine |
dash pepper |

basil, to taste |

Step 1 |
Bring water and broth to a boil, then add rice and carrot, pepper and basil and simmer covered for 10 to 15 minutes or until rice and carrot are cooked. Leave it set before eating. |

Rice soup is served for breakfast in some parts of the world but makes an appetizing starter or dinner. Add shredded chicken for a more substantial meal.
